Zoom meetings that occur in https://umsystem.zoom.us and are recorded in the Zoom cloud are kept for 45 days. After 45 days, the recording is moved to the Zoom trash. It will be retained in the trash, and recoverable, for another 30 days. Users needing to keep recordings longer than this can download the recording to their computer. Alternatively, the recordings can be uploaded to Panopto. Here is more information on how Zoom recordings are stored in Panopto.
